Collin Emsick is still in high school, but the business he launched this summer is already wildly popular. Rosie’s Corner Cottage hosts weekly pop-ups at his parents’ house, where he sells cookies, cake pops, lemon loaves, and his signature oatmeal cream pies. Collin’s dedication to the craft and drive to succeed are wildly impressive, especially for someone so young.

Frost A Gelato Shoppe is set to open in the Spring of 2027 in Village Pointe. Based out of Tucson, Arizona and hoping to bring a little bit of Italy to Omaha.
